Ingredients:
- 1 whole chicken, cut into pieces
- 2 preserved lemons, quartered
- 1 cup green olives, pitted
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 1/4 cup olive oil
- 1 tsp ground ginger
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 1 tsp paprika
- 1/2 tsp ground cinnamon
- 1/4 tsp saffron threads (optional)
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 1 cup chicken broth
Instructions:
- Heat olive oil in a tajine or heavy-bottomed pot over medium heat. Add onions and garlic, and cook until softened.
- Add chicken pieces and brown on all sides.
- Mix in ginger, cumin, turmeric, paprika, cinnamon, and saffron. Cook for another 2 minutes.
- Add preserved lemons, olives, cilantro, parsley, salt, and pepper.
- Pour in chicken broth, cover, and simmer on low heat for about 1 hour, or until chicken is tender.
- Serve hot with couscous or bread.
