Beef Tajine with Apricots and Almonds

Ingredients:

  • 2 lbs beef stew meat, cut into chunks
  • 1 cup dried apricots
  • 1/2 cup blanched almonds
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 1/4 cup olive oil
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/4 tsp ground coriander
  • 1/4 cup honey
  • Salt and pepper to taste
  • 1 cup beef broth
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley

Instructions:

  1. Heat olive oil in a tajine or heavy-bottomed pot over medium heat. Add onions and garlic, and cook until softened.
  2. Add beef chunks and brown on all sides.
  3. Mix in ginger, cinnamon, cumin, turmeric, and coriander. Cook for another 2 minutes.
  4. Add apricots, almonds, honey, cilantro, parsley, salt, and pepper.
  5. Pour in beef broth, cover, and simmer on low heat for about 1.5 hours, or until beef is tender.
  6. Serve hot with couscous or bread.
