Fish Tajine with Chermoula

Ingredients:

  • 2 lbs firm white fish fillets (e.g., cod or halibut)
  • 2 onions, sliced
  • 2 tomatoes, sliced
  • 1 bell pepper, sliced
  • 1/4 cup olive oil
  • 1 lemon, sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Chermoula Marinade:

  • 1/4 cup olive oil
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 4 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions:

  1. Combine all ingredients for the chermoula marinade in a bowl. Add fish fillets and coat well. Let marinate for at least 30 minutes.
  2. Heat olive oil in a tajine or heavy-bottomed pot over medium heat. Add onions, tomatoes, and bell pepper. Cook until slightly softened.
  3. Arrange marinated fish fillets on top of the vegetables. Add lemon slices, cilantro, parsley, salt, and pepper.
  4. Cover and simmer on low heat for about 30 minutes, or until fish is cooked through.
  5. Serve hot with couscous or bread.
