The fish (sea bream) in the oven with vegetables

Here’s a delicious and simple recipe for oven-baked sea bream with vegetables. This dish is healthy, flavorful, and easy to prepare.

Ingredients

For the Fish

  • 2 whole sea bream, cleaned and scaled (you can also use fillets)
  • 2 lemons, sliced
  • 2 cloves garlic, thinly sliced
  • Fresh herbs (such as thyme, rosemary, or parsley)
  • Olive oil
  • Salt and pepper

For the Vegetables

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 200g cherry tomatoes
  • 1 carrot, sliced
  • 2-3 tablespoons olive oil
  • Salt and pepper
  • Fresh herbs (thyme, rosemary, or parsley)

Instructions

1. Prepare the Vegetables

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine the sliced bell peppers, zucchini, red onion, cherry tomatoes, and carrot.
  3. Drizzle with olive oil, then season with salt, pepper, and fresh herbs. Toss to coat the vegetables evenly.
  4. Spread the vegetables on a large baking tray.

2. Prepare the Fish

  1. Rinse the sea bream and pat them dry with paper towels.
  2. Make 2-3 diagonal slits on each side of the fish.
  3. Insert slices of lemon and garlic into the slits.
  4. Season the fish inside and out with salt and pepper. Stuff the cavity with more lemon slices, garlic, and fresh herbs.
  5. Drizzle the fish with olive oil and place it on top of the vegetables on the baking tray.

3. Bake

  1. Place the baking tray in the preheated oven.
  2. Bake for about 25-30 minutes, or until the fish is cooked through and the vegetables are tender. The fish should flake easily with a fork.

4. Serve

  1. Remove the baking tray from the oven and let the fish rest for a few minutes.
  2. Serve the sea bream with the roasted vegetables, garnishing with fresh herbs and lemon wedges.

Tips

  • You can customize the vegetables based on your preference or what’s in season.
  • If you prefer fillets, reduce the cooking time accordingly to avoid overcooking.
