Ingredients:
- 2 lbs firm white fish fillets (e.g., cod or halibut)
- 2 onions, sliced
- 2 tomatoes, sliced
- 1 bell pepper, sliced
- 1/4 cup olive oil
- 1 lemon, sliced
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Chermoula Marinade:
- 1/4 cup olive oil
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 4 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground paprika
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- Juice of 1 lemon
- Salt and pepper to taste
Instructions:
- Combine all ingredients for the chermoula marinade in a bowl. Add fish fillets and coat well. Let marinate for at least 30 minutes.
- Heat olive oil in a tajine or heavy-bottomed pot over medium heat. Add onions, tomatoes, and bell pepper. Cook until slightly softened.
- Arrange marinated fish fillets on top of the vegetables. Add lemon slices, cilantro, parsley, salt, and pepper.
- Cover and simmer on low heat for about 30 minutes, or until fish is cooked through.
- Serve hot with couscous or bread.
