Ingredients:
- 2 sea bream fillets
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon saffron threads, soaked in 2 tablespoons warm water
- 1 large tomato, chopped
- 1 large carrot, sliced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1/2 cup green olives
- 1 preserved lemon, chopped (optional)
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 1 cup fish stock or water
- Salt and pepper to taste
Instructions:
- Preparation:
- Rinse the sea bream fillets under cold water and pat them dry with paper towels. Season with salt and pepper and set aside.
- Cook the Onions and Spices:
- Heat the olive oil in a tagine or a large, deep skillet over medium heat. Add the chopped onion and cook until it becomes soft and translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Add Spices:
- Stir in the ground ginger, cumin, coriander, paprika, turmeric, and cinnamon. Cook for another 1-2 minutes, allowing the spices to release their aromas.
- Add Vegetables and Liquid:
- Add the chopped tomato, carrot, red bell pepper, and zucchini to the tagine. Stir to combine with the onion and spice mixture.
- Pour in the fish stock or water and add the saffron along with its soaking water. Stir well.
- Simmer the Tagine:
- Bring the mixture to a simmer. Cover the tagine or skillet with a lid and let it cook for about 20 minutes, or until the vegetables are tender.
- Add Sea Bream and Olives:
- Place the sea bream fillets on top of the vegetable mixture. Add the green olives and preserved lemon, if using.
- Cover again and let it cook for another 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.
- Finish and Serve:
- Sprinkle the chopped fresh cilantro and parsley over the tagine just before serving.
- Serve the sea bream tagine hot with couscous or crusty bread.
