Minced Meat Tagine

Ingredients:

  • 500g minced beef or lamb
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large carrot, grated
  • 1 zucchini, grated
  • 1 red bell pepper, chopped
  • 1 can (400g) chopped tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper to taste
  • 1/2 cup chopped fresh parsley or cilantro
  • 1/2 cup chopped fresh mint
  • 1 cup vegetable or beef broth
  • Juice of 1 lemon

Instructions:

  1. Prepare the Base:
  • Heat the olive oil in a large tagine or heavy-bottomed pot over medium heat.
  • Add the chopped onion and cook until softened, about 5 minutes.
  • Add the garlic and cook for another minute until fragrant.
  1. Cook the Minced Meat:
  • Add the minced meat to the pot, breaking it up with a spoon. Cook until browned, about 8-10 minutes.
  1. Add Vegetables and Spices:
  • Stir in the grated carrot, zucchini, and chopped red bell pepper. Cook for another 5 minutes until the vegetables start to soften.
  • Add the ground cumin, coriander, cinnamon, paprika, ginger, turmeric, and cayenne pepper (if using). Stir well to coat the meat and vegetables with the spices.
  1. Simmer:
  • Add the chopped tomatoes, tomato paste. Stir to combine.
  • Pour in the broth and bring to a simmer. Reduce the heat to low, cover, and let it cook for 30-40 minutes, stirring occasionally, until the sauce has thickened and the flavors have melded together.
  1. Finish and Serve:
  • Stir in the chopped parsley, cilantro, mint, and lemon juice. Season with salt and pepper to taste.
